I don't know what it is about impending storms that makes me feel so alive. Like something's changing, or ending. It's hard to describe, but there's no denying that it affects me. I'm not a particular fan of the rain, but I do love the prelude. Kind of. I love-hate it.
We made these vegetarian brussels sprouts tacos a few days before this storm hit and are still enjoying the leftovers. They were one hundred percent Mike's idea and creation; I just took the pictures! The sprouts are charred in the oven with mushrooms and onions and then topped with pickled red onion, cilantro, homemade guac and my favorite honey-sesame dressing.
