I'm one of those people who always has a million grand ideas, but never follows through with any of them. Also, I'm slightly afraid of spending money. It's a control issue, I think. As in, spending money makes me feel out of control. So I've had plans to redo my photography "studio" (aka: the office) for ages, but always find excuses to put it off. Except (except!) over the weekend, I finally took the leap. I bought paint. I started painting. This is progress.
Something else productive that came from this weekend? This Thai-inspired veggie bowl! We've been all over the bowls lately, and this one's definitely topping the list. The recipe calls for coconut milk, and I've made some notes below about the kind of milk you want to buy (hint: it comes in a can). We are NOT using coconut milk that's supposed to be a substitute for cow's milk. Confusingly, these are both called coconut milk, but they're not at all the same.
One other note. This this salad is best served warm. It's best fresh (right after cooking), but if you're going for leftovers, I'd definitely reheat them!
