Around here, Sundays are for salads. We make extra to take to work in the morning; it's kind of a tradition. Sunday salad becomes Monday salad, and what better way to start off the week than with a good salad?
This one's inspired by the cilantro sauce we used on these fish tacos. It is good. We're adding it in along with my favorite combo of kale and brussels sprouts, plus tomatoes, plus pepitas, plus lime zest, plus tortilla strips. It's all my favorite things.
