We (all four of us, including the dogs) have been waiting very patiently for spring, and we're starting to see the first signs of it around here. Still, it's been chilly enough that I've kept with some old winter salad favorites: apples, gorgonzola and walnuts. This salad has all three, plus a few extras like tempeh and dates.
If you've never worked with tempeh, I'd highly suggest giving it a try! It's easy to prepare (you're just sauteing it until browned) and the flavor and texture is awesome in salad. If you're not a fan or don't have it readily available, you can always leave it out, or sub in something like tofu (though the texture won't be quite the same).
