Yes, another Asian-inspired bowl! Mike loves these bowls and asked for more of them, and I'm only happy to oblige. Here, we're using all my favorites: gochujang tofu and a creamy peanut dressing (taken right from this Thai peanut sweet potato bowl), plus kimchi and charred broccoli and avocado. The good stuff.
Gochujang is a sweet and spicy chili paste that's becoming more available in regular groceries, but if you can't find it, you can substitute it with sriracha. If you want to skip the tofu altogether, you can always drizzle the bowl with gochujang or sriracha instead!
