This Life Undone
I have three favorite foods: dark cherries, fried plantains and deviled eggs. I love deviled eggs and all their many variations - like this! Deconstructed deviled egg toast. These toasts use nearly all the same ingredients as deviled eggs (hard boiled eggs, mayo, chives, salt, pepper and paprika) and would
make a perfect snack-y lunch or appetizer. (Tip: I've tried all the many tips and tricks for peeling hard boiled eggs, but the trick I find the most useful is use older eggs. In my experience, the older the eggs - the longer they've been sitting in your fridge - the easier they'll peel.)
Deconstructed Deviled Egg Toasts
MAKES 4 TOASTS
4 slices of bread (I used seedy whole grain)
Mayonnaise, for spreading
2 hard boiled eggs, peeled, thinly sliced
1/2 tablespoon chopped chives
Salt and pepper, to taste
Paprika, to taste
Toast the bread, then spread with mayonnaise. Top with hard boiled eggs and sprinkle lightly with chives, salt, pepper and paprika. These toasts are best served warm. Enjoy!
