I've always enjoyed protein pancakes. They're healthier than regular pancakes and (in my opinion) taste just as good. My husband, on the other hand, thinks they're a waste. I get it. Not everyone wants the substitute. I made these pancakes thinking I'd eat most of them myself, but then my husband surprised me. He loved them.
I've tried lots of different protein pancake recipes over the years, but this one's my favorite, too. These pancakes are dense (in a good way) and cinnamon-y, and especially delicious when topped with fresh fruit, maple syrup or even peanut butter! I like to make a bunch and eat them post-workout, but of course you can try them for breakfast or a quick grab-and-go lunch. They hold up fairly well in the fridge.
