Usually, my salads are stuffed with ingredients. I'm a believer in "more is better," especially when it comes to salad, and I think my recipes reflect that. This week, though, I decided to simplify. This blackberry lemon salad has just six ingredients (not including the vinaigrette), and its simplicity is what makes it delicious. We're using a mix of blackberries and blueberries, plus lemon zest, slivered almonds and fresh basil. Use this as an appetizer or side salad alongside fish, or add a grain (like cooked barley or farro) to make it a meal.
The lemon vinaigrette is fairly simple as well, and it has a secret ingredient: lemon curd! The lemon curd adds tart sweetness, and it does really well when whisked up with extra virgin olive oil, vinegar, salt and pepper.
Tip: If you're making this salad ahead, add the slivered almonds and vinaigrette last (just before serving). It'll keep better that way!
